Passam-se para uma travessa e cortam-se aos bocadinhos pequenos. Convém cortar mesmo dentro da travessa para ficar lá aquele molhinho que traz do grelhador. À parte,  esmagam-se os alhos, picam-se os coentros , junta-se um pouco de azeite e esmagam-se no almofariz, ou numa tigela. Que belas caracoladas na varanda! Ao fim de tantos anos ainda não me consegui habituar às sardinhadas nocturnas cá da capital. Não sei porquê mas, para mim, sardinha assada não é petisco prá noite. Mas nos santos populares lá terá que ser (não há mái nada!!!)&lt;/span&gt;&lt;/div&gt;&lt;div align="justify"&gt;&lt;span style="font-family:arial;"&gt;Gosto dos caracóis feitos de maneira muito simples, assim como estes que fiz, a saber a isso mesmo, a caracol.&lt;/span&gt;&lt;/div&gt;&lt;div align="justify"&gt;&lt;span style="font-family:arial;"&gt;Lavei-os com alguma antecedência, bem lavadinhos (faço-o debaixo da torneira, em água corrente). Quando sobra pouco, junto miolo de camarão congelado. Neste caso não foi necessário, o que tinha era suficiente&lt;/span&gt;&lt;/div&gt;&lt;div align="justify"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div align="justify"&gt;&lt;span style="font-family:arial;"&gt;Cozi o bacalhau na água de cozer o camarão e limpei-o de peles e espinhas e fi-lo em lascas.&lt;/span&gt;&lt;/div&gt;&lt;div align="justify"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div align="justify"&gt;&lt;span style="font-family:arial;"&gt;Num tacho com azeite, refoguei cebola picadinha, alho e louro. Juntei o bacalhau, deixei refogar um pouco, acrescentei o camarão e misturei. Deixa-se refogar um pouco. Junta-se tomate maduro picado e um pouco de vinho branco. Quando tivermos obtido um molho homogéneo, colocam-se as trouxas no tacho e deixam-se cozer.&lt;br /&gt;Quando estiveram cozidas, retiram-se para um tabuleiro, junta-se o molho e, pondo por cima as fatias de bacon. A partir daí, volta não volta ... Claro que bem limpinha e bem temperada.&lt;br /&gt;Para este ensopado, temperei de véspera com alho, sal, vinho branco, louro e um pouco de alecrim. &lt;/span&gt;&lt;/div&gt;&lt;div align="justify"&gt;&lt;/div&gt;&lt;div align="justify"&gt;&lt;span style="font-family:Arial;"&gt;&lt;/span&gt;&lt;/div&gt;&lt;div align="justify"&gt;&lt;img style="DISPLAY: block; MARGIN: 0px auto 10px; CURSOR: hand; TEXT-ALIGN: center" alt="" src="http://photos1.blogger.com/x/blogger/3530/3807/320/243786/ensopado1.jpg" border="0" /&gt;&lt;span style="font-family:arial;"&gt;No dia seguinte, deitei azeite e um pouco de banha num tacho, 1 cebola grande picada, 2 dentes de alho e uma folha de louro e deixei refogar. Juntei a carne e deixei alourar. Acrescentei o líquido da marinada, um pouquinho de vinagre, um ramo de salsa, colorau e deixei cozer a carne. &lt;/span&gt;&lt;/div&gt;&lt;div align="justify"&gt;&lt;span style="font-family:Arial;"&gt;&lt;/span&gt;&lt;/div&gt;&lt;div align="justify"&gt;&lt;/div&gt;&lt;div align="justify"&gt;&lt;span style="font-family:arial;"&gt;Acrescentei água suficiente para cozer as batatas e para ensopar o pão, e quando estas estavam cozidas, no final da cozedura, juntei um ramo de hortelã.&lt;/span&gt;&lt;/div&gt;&lt;p&gt;&lt;span style="font-family:arial;"&gt;&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;/p&gt;&lt;p align="justify"&gt;&lt;img style="DISPLAY: block; MARGIN: 0px auto 10px; CURSOR: hand; TEXT-ALIGN: center" alt="" src="http://photos1.blogger.com/x/blogger/3530/3807/320/760711/ensopado2.jpg" border="0" /&gt;&lt;span style="font-family:arial;"&gt;No prato de servir, porque todos gostamos muito, coloquei mais hortelã. O pãozinho era alentejano, de Mértola. É uma comida que não faço tantas vezes quanto gostaria porque o pão dito alentejano que se vende aqui por estes lados é-o mesmo só de nome. Há uma casa que vende pãozinho bom de Martinlongo (que por acaso é algarve) e é aí que às vezes consigo. E, agora, é sempre assim que o faço.&lt;/span&gt;&lt;/div&gt;&lt;div align="justify"&gt;&lt;span style="font-family:arial;"&gt;Barro o pato com uma pasta feita com alho esmagado no esmagador, ou muito picadinho, sal e massa de pimentão e deixo-o ficar por umas horas (se não dispuser de muito tempo, vai de imediato para o forno). &lt;/span&gt;&lt;/div&gt;&lt;div align="justify"&gt;&lt;span style="font-family:Arial;"&gt;Coloco-o num tabuleiro e vai ao forno a assar, apenas com o tempero que já tinha.&lt;/span&gt;&lt;/div&gt;&lt;div align="justify"&gt;&lt;span style="font-family:arial;"&gt;À medida que o pato vai assando, vou retirando para um recipiente o molho que se vai formando.&lt;/span&gt;&lt;/div&gt;&lt;div align="justify"&gt;&lt;span style="font-family:arial;"&gt;Quando o bichinho está assado, retiro-o e aproveito também todo aquele queimadinho que ficou, tirando-o com a ajuda de um pouquinho de água.&lt;/span&gt;&lt;/div&gt;&lt;div align="justify"&gt;&lt;span style="font-family:arial;"&gt;Desfio o pato e deixo arrefecer o molho.&lt;/span&gt;&lt;/div&gt;&lt;div align="justify"&gt;&lt;span style="font-family:arial;"&gt;Num tacho, faço um refogado com alho, cebola e o molho aproveitado, retirando a gordura que se formou à superfície. Junto o pato desfiado, o arroz, deixo secar um pouco e junto o líquido necessário para cozer o arroz, que é o resto do molho acrescido da água necessária para perfazer a medida - 2 de líquido, para 1 de arroz (mas eu como sou trapalhona, roubo um bocadito no líquido). Escorrem-se as moelas, guardando a marinada e põem-se a fritar um pouco no azeite. E como o que é bom deve ser partilhado, cá vai.&lt;br /&gt;&lt;br /&gt;Ingredientes (a olhómetro):&lt;br /&gt;&lt;br /&gt;Coelho, ameijoas, alho, louro, vinho branco, cominhos, sal, azeite, vinagre.&lt;br /&gt;&lt;br /&gt;Tempera-se o coelho com sal, alhos, louro, uma pitada de cominhos e um pouco de vinagre (pouquinho) e deixa-se marinar algum tempo,de preferência de véspera.&lt;br /&gt;Num tacho, deita-se o azeite e alhos esmagados e frita-se aí o coelho.&lt;br /&gt;Quando estiver bem loirinho, deita-se um pouco da marinada e alguma água das ameijoas que entretanto se abriram. Piquei bacon na picadora (só triturados, não é preciso fazê-los em papa). Misturei-lhes um alho esmagado no esmagador e recheei os cogumelos. E procedi sempre assim, em camadas, até se acabarem os ingredientes (não me perguntem quantidades, é tudo a olhómetro). Por cima da última camada, que foi igual à primeira, pus um ramo de salsa, uma folha de louro, um pouco de picante e um pouco de vinho branco no qual desfiz uma colher de tomate triturado (não gosto de polpa). Bata até obter um creme esbranquiçado. Peneire a farinha com o sal, o fermento e o chocolate. Acrescente à massa, batendo sempre, alternando com o leite. Junte as claras já batidas em castelo e misture delicadamente. Despeje numa forma redonda untada e polvilhada. Leve a forno médio (180°C) durante 45 minutos. Retire do forno, espere até ficar morno e desenforme. Deixe arrefecer. Corte uma tampa, na parte superior do bolo, com cerca de 2cm de espessura. Junte o chocolate meio amargo picado e deixe derreter completamente até obter um creme liso.&lt;br /&gt;Divida o creme em duas partes e, numa delas, misture delicadamente as claras batidas em castelo firme ao qual junta as 4 colheres de açúcar.&lt;/span&gt;&lt;/span&gt;&lt;/div&gt;&lt;div align="justify"&gt;&lt;span style="font-family:arial;color:#333333;"&gt;A esta última mistura junte miolo do bolo esfarelado, não usando todo o que foi retirado. Recheie o bolo e tape.
